- Mia passionately shares her exceptional knowledge of homemade cheese and cream production. In this hands-on class, you will learn the basics of making traditional Montenegrin cheese and kajmak. You will also have the opportunity to tour the host's estate and get acquainted with their farm. Traditional cheese and kajmak have been produced in the same way for several hundred years. They are special because of the high-altitude pastures near Durmitor and the cheese-making tradition passed down from generation to generation by mountain women. The meadows are rich with diverse plants, giving the cheese its unique flavor. The cheese is made from fresh milk that is not boiled. It is curdled with rennet and left to stand for several hours before being gathered into a strainer. About seven or eight liters of curd are produced from the milk, which is then placed on specific shelves to drain and pressed with a stone. After about five or six hours of draining, the curd is cut into slices, salted, and placed into a barrel or container.
